1 pound bonless, skinless chicken breasts, cubed
1/2 cup barbeque sauce
1 pre-baked pizza crust
1 1/2 cup shredded mexican cheese (or more if wanted)
15 oz canned black beans, rinsed and drained
1 small onion, red, finely chopped
1 Tbsp cilantro, chopped
Preheat oven to 450. Cook chicken over medium high heat, about 10 minutes. Transfer chicken to medium-sized bowl and toss with half of the barbeque sauce. Place pizza crust on a baking sheet. Sprinkle with 3/4 cup cheese. Arrange chicken and black beans over crust. Sprinkle with onion and cilantro. Drizzle with remaining barbeque sauce and add remaining cheese. Bake 10 minutes or until cheese bubbles.
This is a family favorite, even my girls request it. :D
**The only thing that I do a little different to this recipe is, I spread a thin layer of BBQ Sauce on the crust before my other ingredients. **
